{"id":111,"date":"2006-04-07T19:32:53","date_gmt":"2006-04-07T19:32:53","guid":{"rendered":"http:\/\/lacuisinedejosy.fr\/com\/?p=111"},"modified":"2012-01-22T13:37:11","modified_gmt":"2012-01-22T12:37:11","slug":"tajine-dagneau","status":"publish","type":"post","link":"https:\/\/www.lacuisinedejosy.com\/index.php\/tajine-dagneau\/","title":{"rendered":"Tajine d&rsquo;agneau"},"content":{"rendered":"<ul>\n<li>Un kg de poitrine d\u2019agneau d\u00e9soss\u00e9e<\/li>\n<li>une c \u00e0 s d\u2019huile d\u2019olive<\/li>\n<li>une botte de coriandre fra\u00eeche<\/li>\n<li>200 g de miel (de sapin)<\/li>\n<li>une c \u00e0 c de cannelle<\/li>\n<li>une c \u00e0 c de gingembre r\u00e2p\u00e9<\/li>\n<li>une c \u00e0 c de safran<\/li>\n<li>deux c \u00e0 s d\u2019eau de fleur d\u2019oranger<\/li>\n<li>trois pommes vertes (\u00e9ventuellement ajouter des abricots secs, des raisins secs, des amandes, des pignons de pins, etc\u2026)<\/li>\n<li>un jus de citron jaune<\/li>\n<li>500 g d\u2019oignons blancs<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Faire dorer les morceaux d\u2019agneau dans l\u2019huile d\u2019olive, puis d\u00e9barrasser pour enlever l\u2019exc\u00e9dent de graisse.<\/p>\n<p>Ajouter la coriandre fra\u00eeche \u00e9minc\u00e9e (toute la botte sauf les grosses tiges), saupoudrer avec les \u00e9pices, diluer le miel avec l\u2019eau de fleur d\u2019oranger et l\u2019ajouter dans la cocotte, couvrir et laisser mijoter une heure \u00e0 feu doux. Surveiller afin que le miel ne caram\u00e9lise pas trop.<\/p>\n<p>Au bout d\u2019une heure de cuisson, ajouter le jus de citron, les oignons blancs coup\u00e9s en deux ou en quatre selon leur grosseur, bien remuer puis ajouter les pommes coup\u00e9es en quartiers, ne pas trop les \u00e9craser afin de garder les morceaux de pommes entiers.
