Epluchez et hachez les \u00e9chalotes.<\/p>\n<p>Placez les avec le poisson dans une casserole avec le vin blanc, faites cuire dix minutes \u00e0 tr\u00e8s petit feu.<\/p>\n<p>Ajoutez la cr\u00e8me, salez et poivrez.<\/p>\n<p>Malaxez \u00e0 la fourchette en ajoutant le beurre par petit morceaux.
