Placez-les dans un plat creux avec deux carottes et un oignon \u00e9minc\u00e9s. Parsemez du poivre en grains. Arrosez du vin et du cognac. M\u00e9langez et laissez mariner au frais pendant deux heures en m\u00e9langeant \u00e0 nouveau deux ou trois fois.<\/p>\n<p>Egouttez les deux viandes. Faites chauffer l\u2019huile d\u2019olive dans une cocotte. Placez-y les morceaux de paleron et les tranches de poitrine. Laissez-les revenir trois minutes. Saupoudrez-les de farine et faites-les dorer sur toutes leurs faces. Retirez-les.<\/p>\n<p>Filtrez la marinade, faites la bouillir et r\u00e9duire de moiti\u00e9. Replacez les deux viandes dans la cocotte, ajoutez-y quatre carottes coup\u00e9es en rondelles, deux oignons \u00e9minc\u00e9s, trois gousses d\u2019ail et le bouquet garni. Salez, poivrez, couvrez des tranches de jambon de Bayonne.
