V\u00e9rifiez la cuisson, ils doivent rester ferme.<\/p>\n<p>Faites revenir \u00e0 feu vif dans une po\u00eale les escalopes de veau dans l\u2019huile d\u2019olive. Retirez-les. D\u00e9glacez la po\u00eale avec le vermouth et le jus du citron. Ajoutez la cr\u00e8me, salez &amp; poivrez.<\/p>\n<p>Faites r\u00e9chauffer les escalopes dans la sauce pendant deux minutes. Dressez-les sur le plat de service, entourez-les de l\u00e9gumes et arrosez avec la sauce.
