Retirez les plus grosses nervures centrales. Lavez d\u00e9licatement et s\u00e9chez les feuilles sur un linge. Ebouillantez deux secondes les tiges de ciboulette, plongez-les dans de l\u2019eau glac\u00e9e puis \u00e9gouttez-les.<\/p>\n<p>Dans un saladier, m\u00e9langez les petits suisses avec l\u2019huile, le jus du citron, l\u2019aneth effeuill\u00e9 et cisel\u00e9, sel, poivre et une c \u00e0 c de baies roses concass\u00e9es. Ajoutez le ma\u00efs et les d\u00e9s de saumon fum\u00e9 et m\u00e9langez.<\/p>\n<p>Posez une bonne cuiller\u00e9e de farce au centre de chaque feuille de laitue, refermez-les en aum\u00f4ni\u00e8res et liez-les avec un brin de ciboulette. Proc\u00e9dez ainsi jusqu\u2019\u00e0 \u00e9puisement des ingr\u00e9dients et posez les balluchons \u00e0 mesure sur un grand plat.
