Versez-les dans un faitout, couvrez et faites-les ouvrir sur feu vif. D\u00e9coquillez-les.<\/p>\n<p>Chauffez l\u2019huile dans une sauteuse, saisissez-y les moules sur feu vif trois \u00e0 quatre minutes, r\u00e9servez-les dans un plat. Versez le vinaigre \u00e0 leur place, faites bouillir, ajoutez le piment, le poivre concass\u00e9, le coulis, l&rsquo;eau de cuisson filtr\u00e9e des moules et le laurier.<\/p>\n<p>Faites mijoter dix minutes \u00e0 d\u00e9couvert puis versez sur les moules. Laissez refroidir et placez douze heures au frais.
