Ajoutez les amandes grossi\u00e8rement concass\u00e9es. Saupoudrez de farine, m\u00e9langez puis versez un litre d\u2019eau bouillante. Salez et poivrez, ajoutez la feuille de laurier, la gousse d\u2019ail enti\u00e8re et le zeste d\u2019un citron. Laissez bouillir doucement pendant trente minutes. Retirez la feuille de laurier et le zeste, passez le potage au mixeur.<\/p>\n<p>Fouettez les jaunes d\u2019\u0153ufs avec le jus des citrons, ajoutez le potage, versez \u00e0 nouveau dans une casserole et faites cuire sur feu juste doux, comme une cr\u00e8me anglaise sans porter \u00e0 \u00e9bullition.<\/p>\n<p>Lorsque le velout\u00e9 est pr\u00eat, laissez-le refroidir.
