Eplucher et mixer environ un kilo d\u2019oignons (pour 4 ou 5 personnes).<\/p>\n<p>Dans une cocotte en fonte, mettre un peu d\u2019huile d\u2019olive, puis constituer des \u00e9tages en disposant une couche d\u2019oignons, trois ou quatre tranches de paleron, sel et poivre, recommencer oignons viandes etc\u2026<\/p>\n<p>Quand tout est dans la cocotte, couvrir avec un bon vin rouge. Faire cuire jusqu\u2019\u00e0 ce que la viande soit fondante mais sans qu\u2019elle se d\u00e9fasse trop.<\/p>\n<p>Jeter oignons et vin.
