Faites-les fondre doucement dans le beurre. Quand les \u00e9chalotes sont transparentes, versez le Porto. Laissez bouillir cinq minutes puis versez la cr\u00e8me fluide.<\/p>\n<p>Laissez cuire doucement pour obtenir une sauce onctueuse. Ecrasez le roquefort \u00e0 la fourchette pour le r\u00e9duire en pur\u00e9e. Quand la sauce est onctueuse, ajoutez le roquefort, m\u00e9langez et ne plus faire bouillir.<\/p>\n<p>Faites chauffer tr\u00e8s fort un grill en fonte ou une po\u00eale, faites cuire vivement les pav\u00e9s de b\u0153uf environ 2 minutes par face.
