Passez ensemble au hachoir l\u2019\u00e9chine et le foie de porc. Placez ce hachis dans un saladier avec une gousse d\u2019ail et un oignon \u00e9minc\u00e9s fin, les olives hach\u00e9es, le pain, les herbes, sel &amp; poivre.<\/p>\n<p>Malaxez le tout \u00e0 la main pour obtenir une face bien homog\u00e8ne. Mouillez vos mains, puis fa\u00e7onnez des boulettes de la taille d\u2019une noix.<\/p>\n<p>Taillez les tomates en quartiers, \u00e9p\u00e9pinez-les. Coupez en carr\u00e9s la chair du poivron, pelez et \u00e9mincez les autres oignons et l\u2019ail restant.<\/p>\n<p>Dorez les boulettes sur toutes les faces environ dix minutes dans l\u2019huile chaude. Ajoutez l\u2019ail et l\u2019oignon, remuez jusqu\u2019\u00e0 l\u00e9g\u00e8re coloration, puis int\u00e9grez tomates, poivron, persil et olives enti\u00e8res.
