Faire mac\u00e9rer environ 250 g de raisins secs (blonds et bruns) et 300 g de fruits confits avec un petit verre de rhum.<\/p>\n<p>Dans un saladier, couper 175 g de beurre en morceaux et le laisser se ramollir \u00e0 la chaleur de la pi\u00e8ce, le travailler ensuite en cr\u00e8me au batteur \u00e9lectrique\u00a0: il doit \u00eatre parfaitement onctueux.<\/p>\n<p>Ajouter 125 g de sucre en poudre (en deux ou trois fois), en travaillant sans cesse et vigoureusement la p\u00e2te, jusqu&rsquo;\u00e0 ce que le m\u00e9lange devienne tr\u00e8s l\u00e9ger.<\/p>\n<p>Incorporez ensuite les trois \u0153ufs entiers, un par un, en battant toujours soigneusement entre chaque \u0153uf. Au dernier \u0153uf, la p\u00e2te peut sembler tourner, cela n&rsquo;a aucune importance.<\/p>\n<p>Verser ensuite les 250 grammes de farine tamis\u00e9e avec un sachet de levure chimique et une pinc\u00e9e de sel. Bien remuer pour que la p\u00e2te devienne absolument lisse.<\/p>\n<p>Ajouter en dernier lieu les fruits et le rhum qu&rsquo;ils n&rsquo;ont pas absorb\u00e9, en veillant \u00e0 ce que tout soit bien amalgam\u00e9.<\/p>\n<p>Verser cuiller\u00e9e par cuiller\u00e9e dans un moule \u00e0 cake de 24 cm, pr\u00e9alablement garni de papier sulfuris\u00e9 beurr\u00e9, il ne doit \u00eatre rempli qu&rsquo;au trois quarts. Enfourner le g\u00e2teau \u00e0 four chaud (th.6), au bout de dix minutes r\u00e9duire le thermostat \u00e0 5, puis 30 minutes apr\u00e8s \u00e0 4. Laisser cuire jusqu&rsquo;\u00e0 ce que le cake soit gonfl\u00e9 et dor\u00e9, soit environ une heure et demie.
