{"id":325,"date":"2006-04-26T21:57:57","date_gmt":"2006-04-26T19:57:57","guid":{"rendered":"http:\/\/lacuisinedejosy.fr\/com\/?p=325"},"modified":"2016-02-14T14:32:57","modified_gmt":"2016-02-14T13:32:57","slug":"delice-au-citron","status":"publish","type":"post","link":"https:\/\/www.lacuisinedejosy.com\/index.php\/delice-au-citron\/","title":{"rendered":"D\u00e9lice au citron"},"content":{"rendered":"<p>Une g\u00e9noise (1) coup\u00e9e en deux dans le sens horizontal, fourr\u00e9e de cr\u00e8me au citron.<\/p>\n<p>Pr\u00e9parer ce g\u00e2teau la veille pour que la p\u00e2te soit bien impr\u00e9gn\u00e9e de cr\u00e8me (r\u00e9server au frais).<\/p>\n<p>Pour la cr\u00e8me au citron\u00a0:<\/p>\n<ul>\n<li>le jus de trois citrons (environ 25 cl)<\/li>\n<li>25 cl d&rsquo;eau<\/li>\n<li>2 \u0153ufs<\/li>\n<li>2 cuiller\u00e9es \u00e0 soupe de f\u00e9cule<\/li>\n<li>80 g de sucre<\/li>\n<li>90 g de beurre<\/li>\n<li>6 demi feuilles de g\u00e9latine<\/li>\n<\/ul>\n<p>Porter l&rsquo;eau et le jus de citron \u00e0 \u00e9bullition<\/p>\n<p>D\u00e9layer la f\u00e9cule, les jaunes d&rsquo;\u0153ufs et le sucre au fouet, ajouter un tiers du liquide bouillant, puis la totalit\u00e9.<\/p>\n<p>Remettre sur le feu, en remuant toujours jusqu&rsquo;\u00e0 la reprise de l&rsquo;\u00e9bullition. Arr\u00eater le feu.<\/p>\n<p>Battre les blancs en neige et les incorporer \u00e0 la cr\u00e8me encore chaude, ainsi que la g\u00e9latine (pr\u00e9alablement ramollie dans l&rsquo;eau froide).<\/p>\n<p>Pendant que la cr\u00e8me est ti\u00e8de, incorporer au fouet le beurre en parcelles.
