Laisser bouillir \u00e0 peine une demi-heure afin que les \u00e9corces deviennent tendres.<\/p>\n<p>Apr\u00e8s cette premi\u00e8re cuisson jeter l\u2019eau et peser les cl\u00e9mentines.
