Hors du feu, plongez-y les pruneaux et laissez-les 10 mn.<\/p>\n<p>Dans une cocotte \u00e0 fond \u00e9pais, faites dorer les filets mignons et les \u00e9chalotes pel\u00e9es et hach\u00e9es avec l\u2019huile et le beurre. Salez, poivrez et parsemez-les de thym effeuill\u00e9.<\/p>\n<p>Versez l\u2019armagnac, flambez-le, grattez les sucs de cuisson afin de les dissoudre. Ajoutez les pruneaux sans les \u00e9goutter, couvrez et laissez mijoter vingt minutes \u00e0 feu doux.<\/p>\n<p>Environ 5 mn avant la fin de la cuisson, versez la cr\u00e8me et le fond de veau dans la cocotte, remuez et laissez \u00e9paissir un peu \u00e0 d\u00e9couvert.
