Mettez le beurre en menues parcelles. Ajoutez l&rsquo;\u0153uf battu et, si besoin est, 1\/2 coquille d&rsquo;eau pour obtenir une p\u00e2te mall\u00e9able. Fraisez plusieurs fois. Laissez reposer au moins 30 minutes.<\/p>\n<p>Pelez les pommes, coup\u00e9es les en lamelles pas trop minces. Faites fondre une grosse noix de beurre dans une grande po\u00eale, faites dorer les pommes en remuant doucement. Quand elles sont toutes dor\u00e9es, saupoudrez de sucre, laissez un peu caram\u00e9liser. Versez l&rsquo;alcool, flambez, laissez ti\u00e9dir.<\/p>\n<p>Battez l&rsquo;\u0153uf avec le sucre, ajoutez la cr\u00e8me, les amandes puis le rhum.<\/p>\n<p>Etalez la p\u00e2te pas trop mince. Piquez-la, faites chauffer le four (th.6). Mettez les pommes en les prenant dans la po\u00eale avec une fourchette. Ajoutez \u00e0 la cr\u00e8me le jus restant dans la po\u00eale. M\u00e9langez. Versez cette cr\u00e8me sur les pommes.
