Verser 1\/2\u00a0litre d\u2019eau et le cube de bouillon. Compter 30\u00a0minutes de cuisson \u00e0 partir de l\u2019\u00e9bullition.<\/p>\n<p>Faire un caramel blond avec\u00a0 le sucre et quelques pinc\u00e9es de sel. Ajouter les amandes mond\u00e9es, m\u00e9langer puis verser cette pr\u00e9paration sur une feuille de papier cuisson. Laisser refroidir puis briser ou hacher au couteau en petits morceaux.<\/p>\n<p>Faire dorer les tranches de lard sur les deux faces.<\/p>\n<p>Emincer finement la derni\u00e8re endive, arroser avec l\u2019huile d\u2019olive.<\/p>\n<p>Mixer finement les endives cuites en incorporant la cr\u00e8me fra\u00eeche.<\/p>\n<p>Saler et poivrer si n\u00e9cessaire puis r\u00e9partir dans quatre bols.<\/p>\n<p>Garnir de tranches de lard et parsemer d\u2019amandes au caramel, ajouter les endives crues.
