M\u00e9langer le sucre, la poudre d&rsquo;amandes et la farine puis ajouter le beurre en travaillant du bout des doigts. D\u00e9poser le crumble sur une plaque recouverte de papier sulfuris\u00e9 et cuire \u00e0 four pr\u00e9chauff\u00e9 \u00e0 180\u00b0C pendant 12 mn environ jusqu&rsquo;\u00e0 une belle coloration. R\u00e9server au sec.<\/p>\n<p><strong>Pr\u00e9paration des agrumes : <\/strong><br \/>\nPeler \u00e0 vif \u00a0oranges, citron et \u00a0pamplemousse. Pr\u00e9lever les supr\u00eames, les r\u00e9server.<\/p>\n<p><strong>Pr\u00e9paration de la sauce caramel :<br \/>\n<\/strong>Mettre 2 c\u00e0s du jus des agrumes dans une casserole avec le sucre. Chauffer sur feu moyen jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;un caramel. Stopper la cuisson en ajoutant la cr\u00e8me, bien m\u00e9langer puis incorporer le beurre en morceaux. Laisser refroidir.<\/p>\n<p><strong>Montage :<br \/>\n<\/strong>Dans une assiette mettre un cercle de 8 cm de diam\u00e8tre et disposer dans ce cercle des supr\u00eames d&rsquo;agrumes en variant les couleurs.
