{"id":463,"date":"2006-05-02T22:02:13","date_gmt":"2006-05-02T20:02:13","guid":{"rendered":"http:\/\/lacuisinedejosy.fr\/com\/?p=463"},"modified":"2016-02-14T14:48:52","modified_gmt":"2016-02-14T13:48:52","slug":"mazarin","status":"publish","type":"post","link":"https:\/\/www.lacuisinedejosy.com\/index.php\/mazarin\/","title":{"rendered":"Mazarin"},"content":{"rendered":"<p>Le g\u00e2teau aux amandes pr\u00e9f\u00e9r\u00e9 d&rsquo;Alain&#8230;<\/p>\n<p><!--more--><\/p>\n<p>Pour 12 personnes \u2013 pr\u00e9paration 30 mn \u2013 repos 2 h &#8211; cuisson 45 mn<\/p>\n<ul>\n<li>125 g d\u2019amandes en poudre<\/li>\n<li>220 g de farine<\/li>\n<li>40 g de sucre en poudre<\/li>\n<li>125 g de sucre glace<\/li>\n<li>275 g de beurre<\/li>\n<li>2 \u0153ufs<\/li>\n<li>2 jaunes d\u2019\u0153ufs<\/li>\n<li>1 zeste de citron<\/li>\n<li>1 gousse de vanille<\/li>\n<li>sel fin<\/li>\n<\/ul>\n<p>Pr\u00e9paration\u00a0:<\/p>\n<p>Ouvrez la gousse de vanille en deux dans sa longueur et pr\u00e9levez-en la pulpe avec la pointe d\u2019un couteau. M\u00e9langez celle-ci avec 150 g de beurre, le sucre en poudre, une pinc\u00e9e de sel et les deux jaunes d\u2019\u0153ufs.<\/p>\n<p>Travaillez bien le tout de fa\u00e7on \u00e0 obtenir une pommade.<\/p>\n<p>Saupoudrez de 200 g de farine tamis\u00e9e et p\u00e9trissez jusqu\u2019\u00e0 l\u2019obtention d\u2019une p\u00e2te souple. Enveloppez-la dans du papier d\u2019aluminium ou du film et laissez-la reposer au r\u00e9frig\u00e9rateur pendant deux heures.<\/p>\n<p>Pr\u00e9chauffez le four \u00e0 210\u00b0 (th.7).<\/p>\n<p><ins>Pr\u00e9parez la garniture<\/ins>\u00a0:<\/p>\n<p>Tamisez le sucre glace au dessus du reste de beurre. Ajoutez les \u0153ufs entiers, battez le tout jusqu\u2019\u00e0 obtention d\u2019une pr\u00e9paration mousseuse. Incorporez ensuite les amandes, le zeste r\u00e2p\u00e9 du citron, et peu \u00e0 peu, le reste de farine. R\u00e9servez.<\/p>\n<p>Abaissez la p\u00e2te et garnissez-en un moule \u00e0 tarte, \u00e0 fond amovible, de 24 cm de diam\u00e8tre. Etalez la garniture sur le fond de tarte. Faites cuire \u00e0 mi-hauteur du four pendant 45 mn.
