Retirez la po\u00eale du feu.<\/p>\n<p>Cassez les \u0153ufs en s\u00e9parant les blancs des jaunes. Fouettez les jaunes avec les deux tiers du sucre jusqu\u2019\u00e0 ce qu\u2019ils blanchissent, incorporez le rhum. Montez les blancs en neige ferme avec le sel, en fin d\u2019op\u00e9ration, ajoutez le reste de sucre. Incorporez alors d\u00e9licatement cette meringue aux jaunes battus.<\/p>\n<p>Replacez la po\u00eale sur le feu, chauffez.
