Au bout de vingt minutes de cuisson, enlever la deuxi\u00e8me peau. R\u00e9server deux ou trois ch\u00e2taignes par personne.<\/p>\n<p>Emincer finement le c\u00e9leri et un oignon, faire revenir ces l\u00e9gumes dans un peu de beurre ou d\u2019huile d\u2019olive, lorsqu\u2019ils sont devenus transparents, ajouter les ch\u00e2taignes, recouvrir avec le bouillon de volaille, de la noix de muscade r\u00e2p\u00e9e. Saler et poivrer.
