Saler et poivrer, battre le tout en ajoutant l&rsquo;huile en filet.<\/p>\n<p>Incorporer l&rsquo;\u00e9chalote, les fines herbes, les c\u00e2pres, les cornichons coup\u00e9s en fines rondelles et les blancs d&rsquo;oeuf hach\u00e9s.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>T\u00eate de veau :<\/strong><\/p>\n<p>Mettre la t\u00eate de veau, pr\u00e9par\u00e9e et roul\u00e9e par le boucher, dans une grande cocotte, recouvrir largement d&rsquo;eau, ajouter le vin blanc, les carottes et l&rsquo;oignon coup\u00e9s, l&rsquo;ail hach\u00e9, un jus de citron, le bouquet garni.<\/p>\n<p>Saler au gros sel gris, poivrer.<\/p>\n<p>D\u00e9layer la farine dans un verre d&rsquo;eau, verser dans la cocotte et laisser cuire doucement une heure trente \u00e0 deux heures \u00e0 couvert.<\/p>\n<p>V\u00e9rifier la cuisson en piquant avec une aiguille \u00e0 brider, \u00e9goutter la t\u00eate de veau, la d\u00e9couper en tranches ou en morceaux afin de partager les morceaux fermes, g\u00e9latineux et la langue.<\/p>\n<p>Servir avec des pommes de terre cuites \u00e0 la vapeur et saupoudr\u00e9es de persil cisel\u00e9, et une sauce gribiche.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Recettes issues du blog \u00ab\u00a0la table lorraine d&rsquo;Am\u00e9lie\u00a0\u00bb, l\u00e9g\u00e8rement modifi\u00e9es.. \u00a0Sauce Gribiche : Ecaler les oeufs durs, \u00e9craser les jaunes \u00e0 la fourchette et hacher les blancs.
