Mettre les p\u00e9pins dans un nouet de gaze.<\/p>\n<p>Couper fin les \u00e9corces enti\u00e8res au couteau pour obtenir des \u00e9corces de 3 mm.<\/p>\n<p>Mettre \u00e0 mac\u00e9rer ensemble \u00e9corces, chair, eau et p\u00e9pins enferm\u00e9s dans une gaze.<\/p>\n<p>Laisser tremper une nuit.<\/p>\n<p>Le lendemain, faire bouillir ou plut\u00f4t bouilloter le tout 2 heures en couvrant \u00e0 moiti\u00e9, attention que \u00e7a ne d\u00e9borde pas.<\/p>\n<p>Remuer uniquement \u00e0 la cuill\u00e8re en bois, ne pas \u00e9cumer.<\/p>\n<p>Si on a bouilli trop fort et qu&rsquo;on croit devoir ajouter de l&rsquo;eau pour compenser une \u00e9vaporation, pas plus d&rsquo;un demi-verre.<\/p>\n<p>Ajouter tout le sucre\u00a0d&rsquo;un coup puis ramener \u00e0 \u00e9bullition. Bouillir alors \u00e0 d\u00e9couvert et \u00e0 gros bouillons 15 minutes.<\/p>\n<p>V\u00e9rifier si la marmelade est prise en d\u00e9posant une cuiller\u00e9e sur une assiette mise au cong\u00e9lateur auparavant.
