Nettoyez les petits oignons, taillez-les en quatre et leurs tiges en tron\u00e7ons d\u2019un centim\u00e8tre. Epluchez et \u00e9mincez les gousses d\u2019ail. Taillez les filets d\u2019anchois en morceaux.<\/p>\n<p>Faites fondre 30 g de beurre dans une sauteuse. Jetez-y les \u00e9chalotes, les oignons et leurs tiges, l\u2019ail, les filets d\u2019anchois, le romarin et la menthe. Salez, poivrez et laisser suer quinze minutes \u00e0 feu doux en remuant de temps en temps. Gardez sur une assiette.<\/p>\n<p>Cassez les \u0153ufs dans un saladier, battez au fouet avec la cr\u00e8me, le parmesan, sel &amp; poivre.<\/p>\n<p>Chauffez le reste de beurre dans une sauteuse jusqu\u2019\u00e0 ce qu\u2019il mousse. Versez la pr\u00e9paration aux \u0153ufs et laissez cuire trois minutes en remuant jusqu\u2019\u00e0 ce que l\u2019omelette soit presque prise.<\/p>\n<p>Versez les l\u00e9gumes sur l\u2019omelette, tassez-les l\u00e9g\u00e8rement afin de bien les incorporer aux \u0153ufs. Couvrez et laissez cuire trois minutes \u00e0 feu doux.
