Les \u00e9ponger, les s\u00e9cher.<\/p>\n<p>Pr\u00e9lever les zestes du citron et de l&rsquo;orange. Les blanchir tr\u00e8s rapidement dans une petite casserole d&rsquo;eau bouillante. Presser les fruits et r\u00e9server leur jus m\u00e9lang\u00e9s. Saler et poivrer les saint jacques puis les po\u00ealer environ 1 \u00e0 2 mn de chaque c\u00f4t\u00e9 dans 30 g de beurre chaud. D\u00e9glacer avec le Cointreau et un peu de jus d&rsquo;agrumes. Retirer les noix de saint jacques de la po\u00eale et les r\u00e9server.<\/p>\n<p>Faire r\u00e9duire le jus de cuisson de moiti\u00e9 \u00e0 feu vif. Ajouter la cr\u00e8me, rectifier l&rsquo;assaisonnement si n\u00e9cessaire, allonger d&rsquo;un peu de jus d&rsquo;agrumes. Laisser cuire la sauce en remuant puis ajoutez le beurre restant par morceaux en fouettant. Dresser les coquilles sur les assiettes chaudes napp\u00e9es de sauce. Les d\u00e9corer des zestes et de brins de persil.
