D\u00e9poser quelques branches de thym et le magret par-dessus. Remettre quelques branches de thym sur le magret et bien recouvrir le tout de sel. Fermer le r\u00e9cipient et le mettre pour 30 heures dans le bas du frigo.<\/p>\n<p>Au bout de ce temps, enlever le magret du sel. Bien enlever soigneusement tout le sel, essuyer le magret avec du papier essuie-tout. D\u00e9poser le magret sur un torchon bien propre, le poivrer g\u00e9n\u00e9reusement de tous c\u00f4t\u00e9s avec le poivre 5 baies et\/ou du piment d&rsquo;Espelette.
