Ajouter progressivement le sucre en pluie dans les blancs, continuer de les battre, ils deviennent brillants.<\/p>\n<p>A la spatule, ajouter d\u00e9licatement la poudre d&rsquo;amande et l&rsquo;extrait d&rsquo;amande am\u00e8re.<\/p>\n<p>Avec deux petites cuill\u00e8res, mouler des noix de p\u00e2te (qui est tr\u00e8s collante) et les d\u00e9poser sur une plaque \u00e0 g\u00e2teau beurr\u00e9e et recouverte de papier sulfuris\u00e9 beurr\u00e9 aussi.
