Enlever le nerf et peler la fine pellicule qui la recouvre. Trancher horizontalement et tr\u00e8s finement chaque coquille, les d\u00e9poser dans un bol.<\/p>\n<p>Peler \u00e0 vif un pamplemousse, une orange et un citron jaune, s\u00e9parer les segments et les recouper en petits morceaux, r\u00e9server dans un autre bol.<\/p>\n<p>Pr\u00e9lever le zeste du citron vert, le tailler en longs b\u00e2tonnets tr\u00e8s tr\u00e8s fins, r\u00e9server.<\/p>\n<p>Pr\u00e9parer une sauce avec de l&rsquo;huile d&rsquo;olive, le jus du citron vert, un peu de sel.<\/p>\n<p>D\u00e9poser dans un saladier les coquilles \u00e9minc\u00e9es, les segments d&rsquo;agrumes, le zeste du citron vert et la sauce. Remuer d\u00e9licatement, mettre au r\u00e9frig\u00e9rateur pour une heure, ne pas oublier de remuer cette pr\u00e9paration tous les quarts d&rsquo;heure.<\/p>\n<p>Au moment du service, d\u00e9poser les coquilles dans une petite assiette creuse, arroser d&rsquo;un peu de sauce, quelques zestes, et des baies roses \u00e9cras\u00e9es entre les doigts.
