Laisser refroidir.Dans un saladier, m\u00e9langer la viande hach\u00e9e, les jaunes d&rsquo;oeufs, l&rsquo;oignon, la coriande cisel\u00e9e, et les \u00e9pices\u00a0: cumin, paprika, muscade, piment de Cayenne, sel et poivre\u00a0; ajouter \u00e9galement 2 c\u00e0s d&rsquo;huile d&rsquo;olive. Bien m\u00e9langer tous les ingr\u00e9dients et laisser reposer une petite heure au frais.<\/p>\n<p>Mettre 2 ou 3 c\u00e0s de farine dans une assiette creuse. Former des boulettes de viande de la taille d&rsquo;une noix, les fa\u00e7onner en les aplatissant un peu et les rouler tr\u00e8s l\u00e9g\u00e8rement dans la farine. R\u00e9server dans une assiette.<\/p>\n<p>Lorsque toutes les boulettes sont form\u00e9es, faire chauffer le reste d&rsquo;huile d&rsquo;olive dans une grande po\u00eale, mettre toutes les boulettes, sans les superposer, et faire cuire \u00e0 feu mod\u00e9r\u00e9 pendant 7 \u00e0 8 minutes.
